Trey Wilson of Customshop has worked in a lot of kitchens to perfect his art. Years spent running the show at Dean & Deluca has produced one of the talents of the Charlotte restaurant scene. As soon as you walk in the front door, the slicer is stocked with charcuterie provisions.
Customshop is in front of Presbyterian Hospital on Elizabeth Avenue. With all of the construction that put a blight on the neighborhood's front street, you would have thought Will and company would have cut and run. In fact, these guys are knocking out satisfied tables by the dining room full.

The beautiful restaurant was built out by noted designer Brent Baronofsky, and makes you feel like you have the opportunity to have one of the best meals in the city prepared by someone who is responsible in their craft.
We started off with a cheese plate of extraordinary taste and sophistication. Do not miss the Blu di Bufala served with Thinkbees Honey harvested locally right here in the Queen City.
We followed with the chicken liver pate' which I do not normally order, but I was with Brent, the designer of the restaurant and culinary aficionado, and he insisted.
For my finale, we went with another of Brent's favorites, the Apple Cider and Beer Braised Pork Belly, Coronas and Sauteed Greens.
Next time you are in the mood for cullinary excellence in a beautiful and intimate setting, go see Will at the Customshop.
